Shopping? Whyte Ave and 124 Street are two shopping districts where you can wander outside and check out neat boutiques etc. Edmonton has a Mountain Equipment Co-op and an IKEA and an Abercrombie&Fitch and a couple of H&Ms, yarn stores and farmers' markets and some great independent bookstores, so whatever you're interested in you can probably find it here.
As for eating, you can't not eat out forever - you just have to learn about good choices and figure out what you can enjoy within those guidelines, so there's got to be some kind of restaurant that fits those limits in Edmonton!
Going to a movie? The cinema on the top of the City Centre mall is nice, comfortable seats, multiple screens, etc, or you can check out whether there's something unusual on at the Princess or the Metro. Also, check out concert schedules and theatre schedules, maybe there's some show that sounds interesting.
You had said no outdoorsy stuff, but I'm still going to suggest an outdoor thing that my friends and I had fun with last fall -- Segway tours of the River Valley. They aren't cheap, but we had a lot of fun.
