As you correctly said, coatwalas & waiters are alert and they stop immediately if they find someone taking a video.

A few times I had my mobile was in shirt pocket and the camera was facing the front, although I wasn't taking video, and they knew it, they asked me to keep the mobile in trouser pocket.

I would recommend don't go with the videos. People who go there to take such videos are ideally not having enjoyment in there mind.. there intentions are different. Remember girls working in bars are not robots they are also humans. Shower Money on them, make them feel special and there you go. It would work as a bulls eye. You would get girl in first meeting too but what's the point of having a dead fish in bed? There is nothing to worry there too. Even there they take your and girls ID. It's not an offense unless you use it without submitting your ID and all these people have setting with the LE so relax.
